THE POUND CAKE RECIPE IS BY CAROL KICINSKI AND WAS SHARED ON HER BLOG SIMPLY GLUTEN-FREE. I CREATED THE BERRY MIXTURE ON TOP:
Honey-Sweetened Berries with Lemon
2 cups sliced strawberries
1/2 cup blueberries
juice and zest of 1/2 a lemon
1/4 cup honey
Mix ingredients together and allow to sit for 1 hour before serving to allow the flavors to blend together.

I HAD TO CHANGE THE RECIPE TO MAKE IT DAIRY-FREE. I DID SO BY EXCHANGING RICE MILK FOR THE MILK AND BY USING EARTH BALANCE SOY FREE BAKING STICKS INSTEAD OF BUTTER.
