THE POUND CAKE RECIPE IS BY CAROL KICINSKI AND WAS SHARED ON HER BLOG SIMPLY GLUTEN-FREE. I CREATED THE BERRY MIXTURE ON TOP:

Honey-Sweetened Berries with Lemon
 2 cups sliced strawberries
1/2 cup blueberries
juice and zest of 1/2 a lemon
1/4 cup honey
Mix ingredients together and allow to sit for 1 hour before serving to allow the flavors to blend together.

Did you make any changes to the recipe?
I HAD TO CHANGE THE RECIPE TO MAKE IT DAIRY-FREE. I DID SO BY EXCHANGING RICE MILK FOR THE MILK AND BY USING EARTH BALANCE SOY FREE BAKING STICKS INSTEAD OF BUTTER.

WATCHING THE INGREDIENTS COMBINE INTO A CREAMY-LOOKING BATTER.




 What was your least favorite part?
MIXING IN THE EGGS, ONE EGG AT A TIME. UGH.




How does it taste?
THE POUND CAKE WAS LIGHT AND SWEET, AND THE BERRIES WERE BOLD AND FLAVORFUL.

YES, I DO.

YES!

Would you like to try the pound cake with any other toppings?
YES! I'D LIKE TO TRY MASHING THE BERRIES FOR SOMETHING MORE LIKE A SAUCE.

Did you make any changes to the recipe?
YES. I USED 1/2 CUP EACH OF BROWN RICE FLOUR AND SORGHUM FLOUR, I USED REGULAR GLUTEN-FREE VANILLA, AND THEN I ADDED A CUP OF SLICED STRAWBERRIES AND HALF A CUP OF ENJOY LIFE CHOCOLATE CHIPS.

THAT I WAS TRYING OUT SOMETHING NEW.

CUTTING THE STRAWBERRIES.

IT WAS GREAT!

 I HAD TO MAKE SOME CHANGES TO MAKE IT DAIRY-FREE. FOR THE DOUGHNUT PART, I SUBSTITUTED  PLAIN ALMOND YOGURT FOR THE SOUR CREAM, AND FOR THE CARAMEL GLAZE, I USED EARTH BALANCE SOY FREE BAKING STICKS INSTEAD OF BUTTER AND RICE MILK INSTEAD OF HEAVY CREAM.

YES, YES I DID.

What did you like most about this recipe?
GREASING THE DOUGHNUT PANS WITH COCONUT SPREAD BECAUSE IT FELT NICE IN THE PANS.




 What was your least favorite part?
GLAZING THE DOUGHNUTS BECAUSE I WANTED THEM TO BE PERFECT AND THEY WEREN'T.

How does it taste?
THE DOUGHNUTS WERE NUMMY! THE GLAZE WAS CREAMY AND SWEET AND IT COMPLIMENTED THE DOUGHNUTS WELL.




Do you think other kids could make this recipe?
YES, BUT THEY WOULD NEED HELP USING THE STOVE FOR THE GLAZE.

SURE... THE NEXT TIME I HAVE SOME RIPE BANANAS TO USE.
